In Bulgaria we’ve never celebrated pancake day. But we have, and still do, celebrate the concept of family and this is mostly what pancakes are about for us. Bulgarian pancakes are much more than merely food: we eat them on Saturday or Sunday morning when the family is together. We share a laugh and talk about our weeks, sharing private matters that most of the western world these days considers unimaginable to discuss.
We use home made toppings and sprinkle crashed white cheese (because we love this thing!)

Ingredients for Bulgarian pancakes (makes 7)
- 3 eggs;
- 400ml whole milk;
- 2 cups white flour;
- pinch of salt;
- 2 tablespoons of sunflower oil.
